This coffee is grown in Timaná, Huila, Colombia, by producer Yadimir Perez as part of the Cata Timaná project. The Bourbon Ají variety is processed using a traditional washed method, involving hand-selection of ripe cherries, controlled fermentation, and slow drying. The resulting cup offers a clean and elegant profile, characterized by bright citrus-driven acidity with notes of mandarin and lemongrass, supported by a silky body and a long, delicately sweet finish.
