amenokaku coffee roasters opened in 2021 in the Naramachi historic district of Nara, Japan, named after a deity from the Kojiki, Japan's oldest recorded text, who symbolizes making the impossible possible. The roastery operates four distinct machines, a 1996 Probat L5, a Diedrich IR5, a Lucky SLR4, and a Stronghold S7X, each contributing different characteristics to the roasting process. amenokaku specializes in Geisha variety coffees sourced from international auctions, offering a wide range of coffees daily. That breadth of equipment and origin selection reflects an ambition to explore the full range of what specialty coffee can express, rooted in a deep respect for craft and tradition.
