This specialty coffee is a Java variety grown at 1,750 meters altitude on Finca Las Flores in the Huila region of Colombia. Produced by Jhoan Vergara, this lot undergoes a precise thermal shocked washed process, involving cherry oxidation, a 60-hour fermentation, and a hot water wash. The resulting cup profile is characterized by intense sweetness and acidity, with distinct flavor notes of lemongrass, passion fruit, ginger, and mango. It is a light-roasted coffee with a light body, offering a clean, complex, and structured experience.

Phoenix Coffee Roasters

Phoenix Coffee Roasters is a specialty roastery in Dresden, Germany, founded in 2006 by Lars Uhlig under the original name Dresdener Kaffeerösterei and rebranded in 2009. As one of the first specialty coffee roasters in Germany, Phoenix helped advance the movement at a time when it barely existed in the city and remains Dresden's only dedicated specialty roastery. Lars is joined by fellow roasters Frederik Bauer-Stäb and Hauke Mayer, and in August 2025 the team upgraded from their original Giesen to a Loring S35 Kestrel. Phoenix imports most of its green coffee directly from farmers the team has worked with for years and prints the price paid for every lot alongside detailed producer biographies on each label. The range spans espresso, filter and omni roasts as well as limited specialty lots such as a Colombian Gesha, all roasted to bring clarity and origin character to the cup.
