It is a Gesha variety coffee that undergoes a unique processing method: the cherries are held for 36 hours, depulped and washed, then fermented again for 40 hours submerged in water. The flavor profile features sweet ripe apricot and stone fruit notes, bright cherry acidity, and a lingering sweet oolong tea aftertaste with delicate floral characteristics.
