About This Coffee

This Red Bourbon coffee originates from Las Margaritas, a 33.8-hectare estate in Colombia's Cauca Valley at 1,700 meters altitude. The beans undergo a honey process: cherries are hand-picked at peak ripeness, pulped while retaining mucilage, then fermented anaerobically in barrels for 35 hours before being dried on patios and in silos. The coffee presents aromas of berries, dried pineapple, and mango, with tasting notes of strawberry, mango, dried pineapple, orange peel, and peach. The mouthfeel is silky with juicy, sweet, and tart notes balanced with vibrant acidity.
