This limited edition coffee is a Sudan Rume variety grown at 1650 meters on the Suchitan Volcano in Guatemala. It undergoes a unique 72-hour lactic natural process, where cherries are inoculated with lactic bacteria in a closed anaerobic tank before being sun-dried for 30 days. The resulting cup is complex and juicy, featuring distinct tasting notes of papaya, citrus, and candy, with a winey character and a long aftertaste.
