Process: Special Prep Washed. Roasted for: Filter. This lot underwent flotation, depulping, 48-hour fermentation, and drying on raised beds for about 21 days to reach ~12% moisture. The lot is a premium, day-lot selection with meticulous sorting (90% ripe, 5% semi-ripe, 5% slightly overripe).
