Processed using proprietary Dark Room Drying (DRD), an experimental technique that emphasizes fermentation while maintaining cleanliness. The cup presents bergamot and tropical fruits with notes of lychee, mango, and grape reminiscent of red wine. Acidity reveals quince and apple with complex citrus, while cooler temperatures bring pineapple, floral rose, and a bergamot-forward finish transitioning to oolong.
