About This Coffee

This coffee is sourced from the Pegasing subdistrict in the Aceh region of Indonesia, grown at altitudes between 1,100 and 1,600 meters. It is a Tim Tim variety coffee processed using an experimental carbonic maceration method, where cherries are fermented in an anaerobic environment for 70-80 hours before being dried in temperature-controlled tunnels. The resulting cup offers a unique flavor profile characterized by notes of rhubarb and cacao nibs, providing a distinct departure from traditional Indonesian wet-hulled coffees.
