This Pink Bourbon (Rosado) comes from La Esmeralda farm in San Agustín, Huila, Colombia, cultivated by father and son Victor and Alejandro Ortega at 1,730 meters above sea level. The coffee is grown on a small three-hectare farm in the La Muralla area. Cherries are selectively harvested at peak ripeness every two weeks, then carefully depulped and dry-fermented before being washed and slowly dried on raised beds over 23-25 days. The cup offers delicate florals layered with ripe stone fruit and citrus brightness, featuring notes of peach, red berries, orange zest, and cane sugar. The acidity is lively and elegant with a silky body and clean finish with lingering fruit sweetness.
