The cherries undergo a natural process, including a 24-hour pre-fermentation period under black tarpaulins to enhance body and sweetness, followed by a slow sun-drying process over 25-26 days. The resulting cup is silky smooth, characterized by notes of ripe stone fruits and a boozy richness.
