Sunburst Blend is a light-roasted, fruit-forward blend combining coffees from Quindío and Huila in Colombia with Yirgacheffe, Ethiopia. The blend uses washed lots and intensive co-fermentation techniques (including anaerobic fermentation and peach/strawberry co-ferments) to produce bright, juicy cup characteristics. Varieties include Colombia, Caturra, and Ethiopian heirlooms, with tasting notes of strawberry, peach, and floral aromatics and a delicate, tea-like finish.
Travas Clifton founded Modcup in 2013 and has built its reputation on experimental processing. Features include anaerobic fermentation, thermal shock washing, and co-fermentation with ingredients like dehydrated fruits or hops. These techniques produce intensely fruity, floral coffees that sit firmly on the adventurous end of specialty.
