Águila Solitaria is a Bourbon coffee from El Salvador (Apaneca - Ilamatepec) grown at about 1,500 m and processed with a washed method that includes an initial anaerobic fermentation in grape for 36 hours, followed by depulping, 24 hours resting without water and a further 24 hours with water. The cup is described as round-bodied with vibrant acidity and exotic, fruity character, showing praline, blossom honey and pear notes with subtle winey and floral nuances.
Co-founded by Carlos Moral, whose coffee lineage traces back to his father Rafa's 1979 establishment of Mare Terra coffee imports, Hidden Coffee Roasters emerged from a dynasty dedicated to transforming Spain's understanding of specialty coffee. Operating from Barcelona's Les Corts neighborhood on a Giesen roaster, they represent a new generation of Spanish roasters who prioritize producer relationships and value chain transparency.
