This Pacamara from Silvia and Guillermo Rojas is grown at El Sismo in Huila, Colombia (1,450–1,650 masl). It is a washed lot with extended fermentation—cherries oxidised 36 hours before depulping and beans fermented 36 hours in closed bags. The cup is clean, sweet and fruit-forward with peach, grapefruit, and lime, suited to filter brews.
