The coffee is a Sidra variety, believed to be an Ecuadorian hybrid of Bourbon and Typica, known for its Gesha-like complexity. It is washed processed and features flavor notes of jasmine tea, cooked apple, and mandarin. Jose Rivera runs Origin Coffee Lab (OCL), an exporter recognized for sourcing distinctive specialty lots in northern Peru, and uses this farm as a living laboratory to explore how various genetics express at high altitude.
