Mama Cata Estate is one of Panama's original premium farms, founded in 1911 and located in Boquete at 1600 meters altitude. This Typica varietal is processed using Anaerobic Slow Dry (ASD) method: fresh red cherries are placed in airtight containers for three days of anaerobic fermentation, then dried for 10-20 days before hulling. The coffee features dry fragrance notes of berries, dried mangoes, and raisins. The cup profile includes blackberries, pickled pineapples, dried mangoes, strawberry, and peach, with a finish of raisins and chocolate.
