This blend combines two Geisha lots: 60% Santa Irene from Guatemala and 40% Echo from Panama. The Echo lot is washed and undergoes an extended 50-hour anaerobic fermentation in CO2-flushed tanks with reintroduced cascara. The Santa Irene lot is naturally processed and dried slowly in the cool, misty conditions of Cobán. The resulting cup features a floral, tea-like character from the Echo component balanced by the bright, fruit-forward profile of the Santa Irene, offering a complex and delicate experience suitable for pour over or espresso brewing.
