This single-origin coffee is from Finca Santa Ana in Dipilto, Nicaragua, owned by second-generation producer Aida Lila Zeledón. Grown at 1,200–1,450 meters on volcanic mountain terrain, the Java variety undergoes a washed process. Cherries are handpicked and sorted by flotation and density, followed by pulping, 18–24 hours of tank fermentation with daily temperature adjustment, thorough washing, and 10–14 days of patio drying. The coffee earned 88.04 points, placing 10th in the 2021 Nicaragua Cup of Excellence. Flavor profile includes citrus zest, orange peel, plum, caramel, orange, lime, grapefruit, green apple, and almond tuile with a structured, elegant finish.
