This coffee is produced by the Three Khuns consortium, part of the Indigo Mountain co-op in the Shan Hills of Myanmar. Grown at altitudes between 1,158 and 1,737 meters, this lot consists of Catuai and Caturra varieties. The coffee undergoes an anaerobic natural process, involving 2-5 days of fermentation in sealed tanks followed by 16 days of drying on raised beds. The flavor profile is vibrant and fruit-forward, featuring notes of wine gums, blackberry, and butterscotch.
