Mexico Santa Fé is a washed coffee from the Santa Fé farm, located in the El Triunfo Biosphere Reserve, Chiapas, Mexico, at an altitude of 1400–1700 m.a.s.l. Produced by Juan Carlos Cardenas, whose family has cultivated the 15+ hectare plantation since 2007. The farm grows Bourbon, Caturra, and Catimor varieties. Ripe cherries are wet-milled, fermented in water for 36 hours, and dried on open-air patios for 10–15 days. Flavor notes include toffee, almonds, quince, and chestnuts. Roasted as an Omni profile, balanced for both espresso and filter.
