This Parainema coffee comes from Finca Los Suyates, a high-altitude farm in the Dipilto region of Nueva Segovia, Nicaragua, owned by first-generation producer Mario Gonzalez. The farm sits at elevations of 1,400 to 1,650 meters above sea level near the Honduran border. Produced using an Anaerobic Washed process, ripe cherries are hand-picked, sorted, and fermented in sealed, oxygen-free tanks before being depulped, washed, and dried slowly on raised beds. This method preserves washed clarity while adding aromatic intensity and depth. The coffee features sweet fruit notes like apricot and orange throughout the palate, complemented by a black tea quality.
ONA Coffee was founded in 2008 by former Olympic handball player Saša Šestić, who started the roastery in his Canberra garage with a simple vision: to create and share great coffee. A revelatory experience with a specialty coffee that needed no sugar sparked his passion to introduce exceptional coffee to a wider audience. The company is built on the core values of innovation, community, and excellence, and they aim to create the best and most sustainable coffee in the world, sourcing high-quality green beans through their ethical trading company, Project Origin.
