A low-caffeine coffee from the Los Nogales farm in Pitalito, Huila, Colombia, produced by the Hernández family. The Typica variety undergoes a washed process combined with EA mucilage decaffeination — beans are immersed in hot water (80°C) to open the pores, then treated with a natural solvent derived from coffee pulp, eliminating approximately 95% of caffeine while preserving aromas. A controlled 96-hour fermentation at 18°C with a sourdough starter from previous batches enriches the aromatic profile. The result is a filter-roasted coffee with bright acidity and fruity notes, scoring 87 points.
