This coffee is a Castillo variety from the La Sirena farm in the Quindío region of Colombia, grown at an altitude of 1350 meters. It undergoes a unique 140-hour anaerobic whole-cherry fermentation followed by a banana co-fermented honey process. The flavor profile features notes of dried banana chips, Hubba Bubba, and pineapple, with a caramel sweetness and a smooth chocolate base. This coffee offers a sweet, tropical, and approachable cup with a delicate body and a clean finish.
