La Joya Natural is produced by Yermy Pedraza, a third-generation coffee producer, in the Nariño region of Colombia at 2000 masl. This coffee is a blend of Bourbon, Pink Bourbon, and Castillo varieties. Sorted cherries were fermented anaerobically in sealed bags with a starter culture for five days, then dried on raised beds for 10 days and finished in a mechanical drier for two additional days. The flavor profile features dark cherry, blackberries, and vanilla, with a sweet expression.
