This coffee is a Pink Bourbon from Colombia, specifically Circasia in the Quindío region. It is washed processed at 1700-1800 meters elevation. The lot uses ripe cherries and undergoes a controlled 30-hour underwater fermentation before washing and drying to preserve its floral character and clarity in the cup. Tasting notes include grapes, marmalade, and pear.
