This coffee is a Pacamara variety grown at 2,100 feet in the Ka‘ū region of Hawaii, specifically near Pāhala. It undergoes a custom malolactic natural process, where cherries are inoculated with bacteria in an anaerobic environment and dried in a dehumidified room. This light roast offers an intensely aromatic profile with notes of rose, raspberry, fig, brown sugar, cacao, cinnamon, pineapple, and cream. It features a creamy, velvety body with balanced, bright acidity, resulting in a complex and floral-forward cup.
