This Advanced Natural Gesha from the Zarza Bella Vista farm in Huila, Colombia, is produced by Jhonatan Gasca. The bean is Gesha variety, grown at about 1800 meters elevation. Processing is Advanced Natural, with a 24-hour anaerobic approach and a later thermal shock, then sun-dried for 10–15 days. Tasting notes include Concord grape, champagne, and Dole Whip, suggesting a vibrant, fruity cup. Roast level is Light.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
