The Pink Bourbon variety undergoes a two-stage anaerobic honey process featuring double carbonic maceration in CO2-filled cans, followed by drying on patios for up to 30 days. Roasted light/medium for filter brewing. Tasting notes of Mandarin, Lavender, Chai, Thyme, Pistachio, and Caramel. Cup score: 88.00. Harvested November 2022.
