This coffee is a Gesha variety from the Guabo lot at the El Velo farm, part of the renowned Hacienda La Esmeralda in Boquete, Panama. Grown at an altitude of 1850 meters, it undergoes a cold-ferment washed process where cherries are depulped and fermented at 16°C for 72 hours, followed by climate-controlled drying. This light roast offers a clean, complex profile with tasting notes of tangerine, jasmine, white peach, and mangosteen.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
