This coffee is a Moka variety grown at Hacienda El Obraje in the Tangua region of Nariño, Colombia, at an altitude of 2200 meters. It is processed using an anaerobic natural method, involving 120 hours of fermentation in sealed tanks followed by shade and mechanical drying. The flavor profile features notes of strawberry, plum, nutmeg, and black tea, offering a wine-like fruit character with warm spice and subtle tannins. This light roast is recommended to be rested for 3-4 weeks from the roast date.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
