This Guatemala coffee comes from a Direct Trade relationship with producer Carlos Roldan on his Palencia farm at 1800 meters elevation. It is processed using anaerobic natural methods, with cherries fermented in anaerobic chambers for 240 hours. The variety is Pacamara. The coffee is bright, floral, and sweet with flavor notes of kiwi, cantaloupe, and pineapple.
