It undergoes an experimental honey and anaerobic co-fermentation process, where the whole coffee fruit is fermented with wine yeasts and macerated passion fruit for 72 hours before being pulped and dried. This medium-roast coffee offers a flavor profile characterized by bright tropical fruits, passion fruit, floral notes, vanilla, and a syrupy body.
