This coffee is grown by the Pacas family at Finca La Esperanza in El Salvador. Planted in volcanic soil under a cool mountain climate, the coffee cherries undergo slow maturation to enhance sweetness and flavor clarity. The variety, known as Kenya, traces its genetics back to breeding work at Scott Agricultural Laboratories. This natural processed coffee offers a flavor profile characterized by notes of blackberry, lemonade, tamarind, and floral aromatics, known for its vibrant acidity and rich sweetness.
Phil Goodlaxson founded Corvus Coffee Roasters in 2010 in Denver, Colorado, starting with a small roaster in his garage before scaling up. The roastery now operates multiple retail locations across the Denver metro area and roasts well over 100,000 pounds of coffee annually. Corvus prioritizes direct trade relationships with farmers, many spanning over a decade, and holds more Cup of Excellence coffees and microlots than any other roaster in the Denver area. The company is a finalist in Roast Magazine's 2026 Roaster of the Year awards in the Macro Roaster category. Sustainability runs through the operation, from eco friendly roasting practices and recyclable packaging to a Farmer Focus Program and commitment to gender equity at origin.
