This coffee is produced by Andrés Martinez at Finca El Sendero in the Cauca region of Colombia. The coffee cherries are hand-harvested and undergo a complex experimental process involving fermentation in closed tanks with beer yeast for 48 hours, followed by depulping and an additional 24-hour fermentation. The beans are then dried on raised beds for 12 to 18 days. This coffee offers a complex and vibrant profile with distinct notes of bergamot, jasmine, herbaceous rosemary and juniper, spiced orange, and assorted stone fruits.
Julie and TJ Fairchild's 2003 leap of faith has evolved into Pittsburgh's most thoughtfully community-centered roasting operation, now spanning seven locations with 65+ employees roasting 2,500 pounds weekly. Their philosophy, inspired by a Walt Whitman poem, centers on creating "solid ground for all" through coffee that serves as genuine neighborhood infrastructure.
