This semiwashed Pink Bourbon coffee is produced by Doña Blanca Bolaños at Finca El Diviso in the Tolima region of Colombia. The cherries are sorted by density, depulped, and then undergo a 48-hour anaerobic fermentation before being dried on airflow canopy beds for 18-24 days. The resulting cup features lush fruit flavors, specifically cherry and orange, complemented by a rich maple sweetness.
