Produced by Sergio Aranda Gomez, this lot undergoes a complex experimental process involving flotation, oxidation, and anaerobic fermentation with Saccharomyces cerevisiae yeast, cinnamon sticks, and sugarcane, followed by a thermal shock wash and 12 days of drying. The flavor profile is characterized by notes of coconut flakes, pineapple cake, and strawberry milkshake, offering a bright, pastry-like sweetness with a soft, creamy texture.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta.
