Grown in the high elevations of Arbegona in Sidama, Ethiopia, this coffee comes from a celebrated growing region where cool temperatures and slow cherry maturation contribute to clarity, sweetness, and floral complexity. The lot was processed at the Yaye washing station, which partners with Faysel Abdosh and Catalyst Trade and works with hundreds of smallholder farmers to coordinate cherry collection, processing, and quality. The result is a balanced coffee with floral structure and vibrant acidity typical of high-grown Ethiopian coffees.
Metric Coffee emerged in 2013 from a partnership between Darko Arandjelovic, formerly of Caffe Streets, and Xavier Alexander, an Intelligentsia roaster since 2009. Operating from the West Fulton neighborhood of Chicago, Metric roasts on a meticulously restored 1961 Probat drum roaster, maintaining equipment that speaks to the roastery's appreciation for craft and precision.
