This coffee is produced by Tadessa Yonka in the Gemecho Village of Ethiopia. It undergoes an extensive anaerobic natural process where cherries are sealed in an oxygen-free environment for 96 hours, followed by 30 days of drying. This technical approach results in a complex and layered flavor profile featuring notes of tropical mango, juicy strawberry, and a deep, full-bodied creaminess that persists through the finish.
