Ethiopia Rumudamo Natural comes from the heart of the Sidama region, one of Ethiopia's most appreciated areas for clarity, sweetness, and aromatic complexity. The Rumudamo washing station collects cherries from small farmers in surrounding communities, situated at altitudes frequently exceeding 1,900 meters, where cool nights and fertile soils allow slow maturation and development of deep, expressive flavors. Natural processing is performed with rigorous attention: cherries are hand-sorted at reception, then slowly dried on African beds, being turned frequently to obtain a clean and uniform profile. This lot captures the essence of Southern Ethiopia with fruity notes, high sweetness, and a velvety texture. Flavor notes include apricot, caramel, milk chocolate, and berries.
