This coffee is produced by Alejandro Medina at Finca El Progreso in the village of El Pantano, Timaná, Colombia. The farm spans eight hectares and is planted with Colombia and Castillo varieties. This lot is naturally processed, involving a controlled whole-cherry fermentation to develop complexity and sweetness, followed by slow, regular drying. The resulting cup is vibrant and expressive, featuring flavor notes of red berries, apple, and cocoa.
