Produced by Diego Samuel Bermudez at the Villa Esperanza-Paraiso farm, this coffee undergoes a complex PO2 Thermal Shock process involving multiple stages of anaerobic fermentation and controlled temperature washing. The resulting cup offers a unique flavor profile characterized by notes of poppyseed cake and plum jam. It is roasted specifically for filter brewing methods.
