This coffee is a Gesha variety from the El Mirador farm, located in La Victoria, Jaen, Cajamarca, Peru, at an altitude of 1990 meters. Produced by Yoniser Mego Silva, this lot underwent an anaerobic washed process, involving 25 to 30 hours of fermentation followed by 15 to 18 days of drying. The flavor profile is characterized by notes of cherry blossom, white peach, and Iron Goddess tea, offering a creamy, floral, and complex cup with stonefruit layers.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
