This coffee is produced by Carlos Moreno in El Llano de La Piedra, San Marcos, Tarrazú, Costa Rica at 1800-2000 meters above sea level. The Catuai variety undergoes white honey processing at Don Eli Wet Mill, where cherries are pulped and mechanically de-mucilaged before being spread on raised drying beds for about 12 days and moved by hand every couple of hours. The coffee is then dry milled on-site with quality sorting by screen size, density, and hand selection. Flavor profile features candied orange, dried apricot, maple, and almond toffee with exceptionally clean fruit characteristics and deep confectionary sweetness.
