The Ramirez Estate sits in Jarabacoa, a mountainous region in the Dominican Republic known for cooler temperatures and ideal growing conditions. This lot is processed using the red honey method, where some of the coffee cherry's sticky mucilage remains on the bean during sun-drying. That extended contact with the fruit layer amplifies sweetness and body, bringing forward the bright strawberry character and stone fruit complexity that define the cup.
