A decaffeinated Mexican coffee from Chiapas, grown by smallholder farmers at 1,200–1,500 m. Varieties include Typica, Bourbon, and Caturra. Beans are decaffeinated via the Mountain Water Process (chemical-free, at Descamex in Veracruz). Tasting notes highlight milk chocolate, brown sugar, and soft citrus with aromas of roasted hazelnut and dried fruit; the cup is round and smooth with a clean cocoa finish.
