This coffee is a Castillo variety from Colombia, specifically grown in the Cauca region at 1950 meters above sea level. It is produced by Wilton Benitez at Granja Paraíso 92 farm. The coffee undergoes an experimental process: cherries are fermented with Saccharomyces pastorianus yeast for 48 hours, then slow-dried over 88 hours before sugarcane decaffeination. This light roast coffee offers an indulgent, fruit-driven profile with notes of Turkish Delight, strawberry, rose, blackberry jam, and berries. Suitable for brewing as filter, V60, or espresso.
