It undergoes a warm anaerobic natural process, where cherries are fermented in tanks under direct sunlight at approximately 20°C. This method creates a distinct fermented character balanced with elegance. The flavor profile features notes of blood orange, Meyer lemon, pineapple, and nectarine, reminiscent of a citrus IPA, with a finish of pale caramel sweetness and a hint of bitterness.
