This coffee is a Villa Sarchi variety from the Juanachute micromill in the Tarrazú region of Costa Rica, grown at an altitude of 1800 meters by producer Luis Anastasio "Don Tacho" Castro. It undergoes a natural anaerobic process, involving 120 hours in sealed barrels followed by 120 hours of open-air fermentation, then dried on beds for 40 days. The resulting cup is complex and lively, featuring flavor notes of brown sugar, chocolate, mandarin, and red wine.
