This Colombia single-origin coffee comes from Alto Cañada, La Plata, grown at 1860 meters altitude by Yilver Pajoy at Finca El Arrayan. The Geisha variety undergoes a complex washed process: 36 hours held in cherry, fully depulped and washed, then subjected to a 36-hour secondary fermentation underwater before drying on raised beds in a greenhouse for 18 days. Cup profile features bright citrus notes with tropical fruit characteristics including starfruit and pineapple, complemented by floral notes of jasmine and bergamot, finishing with pomelo and oolong tea sweetness.
Shoebox Coffee Roasters is a Chicago based micro roastery focused on light roast profiles that emphasize acidity, complexity, and fruit forward flavors. Founded by Maxwell, who previously roasted for Jimmy Beans, the operation is built around sourcing and small batch production.
