The lot consists of the rare Papayo variety, which genetic testing suggests is related to Ethiopian landraces. The coffee undergoes a meticulous process involving an 8-hour fermentation in sealed bags, 12 hours in a hopper, and a 36-hour dry fermentation after depulping, followed by washing and drying on raised beds. The flavor profile features notes of orange sorbet, lemongrass, and green papaya.
